Carol Evelyn Larson, age 83 of Mankato, died peacefully, with her five children by her side, on December 20, 2020 at her home in Mankato. Visitation will be on Saturday, January 16, 2021, from 3:00-6:00 pm at Northview-North Mankato Mortuary, 2060 Commerce Drive, North Mankato.  Services, burial, and celebration of her life will be scheduled with her extended family in the spring.  The family prefers memorials be given to Mayo Hospice, Mankato.

Carol was born November 29, 1937 to Alvin and Evelyn (Brunkhorst) Sievers in Lake City, MN. She was the oldest of 8 children.  She graduated from Lake City High School in 1955, and immediately traveled to Mankato where she got a job, and an apartment all on her own, and met the love her life, Al Larson. In 1957, they were married in Butternut at Our Saviour’s Lutheran Church. Together they raised five children, Vickie, Bradley, Mark, Beth, and Michael.

Carol provided in-home daycare for 10 years.  After all her children were in school, she enjoyed waitressing at the Holiday Inn/Garden Inn in North Mankato for 25 years, where she made many lifelong friends.  She also worked a short time at Stoney’s before retiring in 1999.  During her early years she enjoyed weekly bowling at Dutler’s Bowl, monthly card club with her friends, camping, golfing, sewing, and reading. Her dream for retirement was to travel with dad in their motorhome, which they did for 15 years, and made many new friends in Rockport/Fulton, Texas…she was always up for a good time and lived life to the fullest!

Carol is survived by her five children, Vickie (Steve) Larson Foix of Lake Crystal, Bradley (Beth) Larson of Woodbury, Minnesota, Mark Larson of Castle Rock, Colorado, Beth (Brian Kuch) Larson Kruger of Victoria, Minnesota, and Michael (Debbie) Larson of Prior Lake, Minnesota; 15 grandchildren; 14 great-grandchildren; sisters, Anna (Kurt) Sumption, Delores Sievers; brothers, Clyde (Charlene) Sievers, Bill (Gail) Sievers, and Stan (Joye) Sievers; sisters-in-law, Joanne Sievers, Linda Sievers, and Glenys (David) Thorsen of Burnsville, Minnesota; and many nieces, nephews, and her two very special friends Lee Schlueter and Pat Meyer, AND her loyal and cuddly cat, Willie.

She is preceded in death by her husband Al, her parents; brothers, Frank and Ivan Sievers, and sisters-in-law, Harriet and Bev Sievers.
